Chestnut and mushroom crostini with whipped goat cheese, walnuts and roasted chestnuts on a white plate

Chestnut Crostini with Mushrooms, Whipped Goat Cheese and Walnuts

Introduction

Chestnut crostini are a wonderful way to celebrate the flavours of autumn. Sweet roasted chestnuts, earthy mushrooms, creamy goat cheese, and crunchy walnuts come together in an elegant yet surprisingly simple appetizer, perfect for enjoying with a glass of wine.

These chestnut crostini with mushrooms and whipped goat cheese combine crispy toasted baguette with a light, creamy cheese spread and a warm topping of sautéed mushrooms, caramelised chestnuts, and shallots. Every bite offers a delightful balance of sweet, savoury, earthy, and nutty flavours.

For the best results, choose fresh edible chestnuts, firm brown mushrooms, and a mild, soft goat cheese. Cook the mushrooms in a hot pan to develop a rich, golden-brown colour, and briefly sauté the chestnuts in butter to enhance their natural sweetness. Assemble the crostini just before serving to keep the baguette beautifully crisp.

Whether served as an autumn appetizer, a small bite for a wine evening, or part of a seasonal gathering, these homemade crostini bring a touch of rustic elegance to the table.

Why These Chestnut Crostini Work

The secret to these autumn crostini lies in the balance of contrasting flavours and textures.

  • Roasted chestnuts bring gentle sweetness, a delicate nutty aroma, and a pleasantly tender texture.
  • Brown mushrooms add an earthy, savoury depth that naturally complements the chestnuts.
  • Goat cheese and ricotta create a light, creamy base with a pleasant touch of acidity.
  • Shallots, garlic, and thyme enhance the warm, autumnal character of the dish.
  • Walnuts provide crunch and an additional layer of nutty flavour.
  • Honey and lemon juice balance the sweetness of the chestnuts and the tanginess of the cheese.

The cooking techniques are just as important as the ingredients. Browning the mushrooms intensifies their flavour, while briefly sautéing the chestnuts in butter brings out their natural sweetness.

A crisp baguette ties everything together, creating a delicious contrast between the creamy cheese, tender chestnuts, golden mushrooms, and crunchy walnuts.

Ingredients (4 Servings)

Main Ingredients

  • 1 small French baguette (approximately 10–12 crostini)
  • 150 g edible chestnuts (weighed after roasting and peeling)
  • 200 g brown mushrooms (cremini or chestnut mushrooms)
  • 100 g soft, mild goat cheese
  • 80 g ricotta
  • 30 g walnuts
  • 30 g butter
  • 1 small shallot
  • 1 garlic clove
  • 1 tsp honey
  • 1 tsp lemon juice
  • 1–2 sprigs fresh thyme
  • 1–2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

1. Preparing the Ingredients

Preheat the oven to 200°C (390°F).

Carefully score a cross into the rounded side of each chestnut and arrange them on a baking tray. Roast for approximately 20–25 minutes, until the shells begin to open and the chestnuts are tender.

Peel the chestnuts while still warm, removing both the outer shell and the thin inner skin. Roughly chop the peeled chestnuts, leaving some larger pieces for a more interesting texture.

Clean the mushrooms and slice them thinly. Cut the shallot into fine strips and finely chop the garlic.

Lightly toast the walnuts in a dry pan until fragrant, then roughly chop them.

In a bowl, whip the goat cheese with the ricotta, lemon juice, and approximately half of the honey. Season lightly with salt and freshly ground black pepper.

The mixture should be smooth, airy, and thick enough to hold its shape on the crostini.

2. Cooking

Heat a dry frying pan over medium-high heat. Add the sliced mushrooms and cook for approximately 3–5 minutes, allowing excess moisture to evaporate and the mushrooms to develop a golden-brown colour.

Avoid overcrowding the pan and resist stirring too frequently. This helps the mushrooms brown rather than steam.

Add 15 g of butter, the sliced shallot, and fresh thyme leaves. Continue cooking for another 2 minutes. Stir in the garlic, cook briefly, then season with salt and freshly ground black pepper.

In a separate pan, melt the remaining 15 g of butter. Add the chopped chestnuts and sauté for approximately 2–3 minutes.

Drizzle in the remaining honey and allow the chestnuts to caramelise lightly, developing a delicate golden coating and a richer nutty flavour.

Combine the sautéed chestnuts with the mushrooms and shallots, gently mixing to preserve their texture.

Slice the baguette diagonally into pieces approximately 1.5 cm thick. Lightly brush with olive oil and toast in the oven at 200°C (390°F) for 5–7 minutes, until golden and crisp.

3. Finishing Touches

Spread a generous layer of whipped goat cheese and ricotta over each slightly warm baguette slice.

Top with the sautéed chestnuts, mushrooms, and shallots, distributing the ingredients evenly across the crostini.

Sprinkle with toasted walnuts and finish with a few fresh thyme leaves, if desired.

For an extra touch of flavour, add a few drops of good-quality balsamic glaze to complement the natural sweetness of the chestnuts.

Serve immediately while the baguette is still crisp and the mushroom and chestnut topping is pleasantly warm.

Serving Suggestions

Arrange the chestnut crostini on a simple ceramic platter or rustic wooden board. A few roasted chestnuts in their shells and whole walnuts make a beautiful, natural autumn decoration.

Wine Pairing

The combination of sweet chestnuts, earthy mushrooms, and creamy goat cheese pairs beautifully with elegant white wines and lighter styles of red wine.

Pinot Blanc – Small Carpathian Wine Region, Slovakia

A dry Pinot Blanc with gentle acidity, medium body, and subtle nutty notes complements both the chestnuts and the creamy goat cheese. Its freshness also balances the richness of the butter.

Blaufränkisch (Frankovka Modrá) – Small Carpathian Wine Region, Slovakia

An elegant Blaufränkisch with soft tannins, refreshing acidity, and red berry aromas provides a lovely contrast to the earthy mushrooms and naturally sweet chestnuts. Choose a lighter style with restrained oak influence.

Grüner Veltliner (Veltlínske Zelené) – Nitra Wine Region, Slovakia

A dry Grüner Veltliner with lively acidity and delicate peppery notes pairs particularly well with the shallots, thyme, and goat cheese. It is an excellent choice for those who prefer a fresher, more vibrant wine.

The freshness and balanced structure of these wines make them particularly suitable for creamy, nutty, and earthy autumn dishes.

Final Tips and Variations

  • Chestnuts: Always use edible sweet chestnuts. For a quicker version, good-quality pre-cooked, vacuum-packed chestnuts work perfectly.
  • Mushrooms: Replace brown mushrooms with porcini or a mixture of wild mushrooms for a more intense woodland flavour. Avoid overcrowding the pan, as this will cause the mushrooms to steam rather than brown.
  • Cheese spread: For a milder flavour, replace some of the goat cheese with additional ricotta or cream cheese.
  • Texture: Do not chop the chestnuts too finely. Larger pieces add character and allow their flavour to stand out.
  • Crispness: Toast the baguette shortly before serving and assemble the crostini at the last moment.
  • Seasonal variation: A little fresh sage or rosemary can add another aromatic dimension to the mushroom and chestnut topping.
  • A gourmet finishing touch: A few drops of good-quality balsamic glaze can enhance the sweetness of the chestnuts and the earthy flavour of the mushrooms.
