Summer in its simplest form

There is probably no better way to taste a tomato than to pick it straight from the garden on a warm summer morning.

Still slightly warm from the sun, fragrant and perfectly ripe, it needs almost nothing else. Sometimes the best breakfast begins before you even reach the kitchen.

Tomatoes are one of the true flavours of summer. We eat them fresh, slice them into salads, turn them into sauces and passata, preserve them for winter – and, of course, make ketchup from them.

And here is a small botanical twist: the tomato is actually a fruit, even though in the kitchen we treat it very much like a vegetable.

A cook’s little secret

For cooks, the real magic of tomatoes lies in the balance of acidity, natural sweetness and umami.

A fresh ripe tomato brings brightness and acidity to a dish. Heat changes its character: slow cooking removes water, concentrates its natural sugars and deepens its savoury flavour. This is why the same ingredient can feel light and refreshing in a summer salad, yet become rich and comforting in a slowly cooked tomato sauce.

That versatility is perhaps what makes tomatoes so special. From a tomato eaten straight from the vine to passata, salsa, soup or a sauce simmering quietly on the stove, they can play completely different roles in the kitchen.

Never underestimate a perfectly ripe tomato.

Before adding too much to it, taste it first. A good tomato may need nothing more than a little olive oil, good bread, a few leaves of basil and perhaps a glass of wine nearby.

Or simply eat it in the garden.
