Why do mushrooms taste a little like meat?

You may have noticed that well-prepared mushrooms can sometimes remind you of the deep, savoury flavour of meat. That’s no coincidence. Mushrooms naturally contain glutamates, compounds responsible for umami – the fifth basic taste.

This is what gives them remarkable depth and richness, allowing even a simple mushroom dish to develop an intensely savoury character without any meat at all.

In Slovakia, late summer and early autumn bring one of the most rewarding seasons for mushroom lovers. Forests fill with porcini, chanterelles and other wild mushrooms, ingredients capable of transforming a simple risotto, fresh pasta, creamy soup or roasted game into something memorable.

And perhaps that is the real beauty of wild mushrooms: they need very little. A hot pan, some butter, a few herbs – and enough restraint to let the forest speak for itself.

A small tip from TGCC: Pick wild mushrooms only if you are absolutely certain you can identify them. And if you venture into the Slovak mountains, remember that the forest belongs to more than mushroom hunters. A little respect for nature – and occasionally for its bears – never hurts. 😊
