INGREDIENTS

- ¼ cup stone-ground mustard

- ½ tsp red pepper flakes (optional)
- 1½–2 lb salmon fillet (whole or portioned)

- Lightly toasted walnuts
- Parmesan shavings
- Olive oil
- Lemon juice
METHOD
- Preheat the oven to 400°F / 200°C.
Line a baking tray with parchment paper.
- Sauce
Mix honey, mustard, garlic, lemon juice, salt, paprika, and chili.
Do not blend — keep the texture rustic.
- Salmon
Place salmon skin-side down on the tray and brush generously with the sauce.
- Bake
Roast for 12–15 minutes, depending on thickness.
The salmon should remain moist and gently flake.
- Rest
Let stand for 2 minutes before serving.

Arugula with Parmesan and Walnuts
Dress arugula lightly with olive oil and lemon juice.
Add warm walnuts and finish with Parmesan shavings.
