INGREDIENTS

  • 1 small zucchini
  • high-quality olive oil
  • 2–3 garlic cloves
  • salt, to taste
  • freshly ground black pepper

METHOD

  1. Peel the zucchini and slice it into thin rounds.
  2. Lightly crush the garlic — do not finely chop, to prevent burning.
  3. Heat olive oil in a pan over gentle heat.
  4. Add the zucchini and garlic, stir gently, season with salt and a touch of pepper.
  5. Cook slowly, without rushing. When the zucchini takes on a light golden color, turn it over.
  6. Shortly before finishing, add the cheese — just enough to bind the mixture, never to dominate it.
  7. Transfer the mixture to a bowl and blend until smooth and creamy.
  8. Adjust seasoning if needed, or finish with a drop of olive oil.

SERVING

Serve with fresh bread or rolls.
