• 120 g high-quality cod liver in oil
• 80 g butter (room temperature)
• 150 g smooth quark or soft curd cheese
• 1 small shallot or mild onion
• 2 pickled gherkins
• 1–2 tsp Worcestershire sauce
• Sea salt
• White pepper
• Fresh parsley
Optional:
• a few drops of lemon juice
• a drizzle of extra virgin olive oil
METHOD

Whip the butter until pale and fluffy.
