Oat & Vegetable Patties

(A Light Central European Comfort Classic)

Some recipes are born from balance.

From the desire to cook lighter.
From respect for simple ingredients.
From everyday practicality.

These oat patties with vegetables combine oats and vegetables into something naturally satisfying — tender, structured, and full of honest flavor.

Light.
Balanced.
Reliable.

Why This Recipe Works

This recipe is built on simplicity.

Oats create structure.
Vegetables bring moisture.
Eggs bind everything together.
Seasoning defines the character.

Nothing dominates.
Everything supports.

The result is soft, flavorful patties that feel nourishing without heaviness.

Ingredients (4 Servings)

Main Version – Vegetable Oat Patties

  • 120 g rolled oats
  • 1 large carrot, grated
  • ½ zucchini, grated and squeezed dry
  • 1 small onion, finely chopped
  • 2 garlic cloves
  • 2 eggs
  • 2 tbsp grated cheese (optional)
  • salt
  • black pepper
  • smoked paprika or mild curry (optional)

Alternative – Meat & Oat Patties

  • 400 g ground meat (beef / pork mix)
  • 80 g rolled oats
  • 1 egg
  • 2 tbsp whole-grain mustard
  • 2 tbsp milk or cream
  • 1 tsp dried marjoram
  • pinch of nutmeg
  • salt and black pepper

For Cooking

  • olive oil or neutral oil

Method

1. Prepare the Oats

Pour hot water (or milk for the meat version) over the oats.

Let them soak for about 5 minutes until softened.

2. Prepare the Mixture

Vegetable Version

In a large bowl combine:

  • soaked oats
  • carrot
  • zucchini
  • onion
  • garlic
  • eggs
  • cheese (if using)
  • seasoning

Mix well.

Let the mixture rest for 10 minutes to firm up.

Meat Version

In a bowl combine:

  • ground meat
  • softened oats
  • egg
  • mustard
  • milk
  • marjoram
  • nutmeg
  • salt and pepper

Mix gently by hand.

Do not overwork the mixture.

3. Shape

With slightly damp hands, form medium-sized patties.

Keep them moderately thin for even cooking.

4. Cooking Options

Option A – Pan-Frying

Heat oil in a skillet over medium heat.

Cook for:

4–5 minutes per side
until golden and cooked through.

Option B – Oven Baking

Preheat oven to 180 °C (350 °F).

Place patties on a baking tray lined with parchment paper.

Brush lightly with oil.

Bake for:

22–25 minutes
Turn halfway through cooking.

This method produces a lighter, evenly cooked result.

Serving

Best served warm with:

  • creamy mashed potatoes
  • pickled cucumbers
  • simple green salad
  • yogurt or mustard dip

Mashed potatoes create the ideal contrast to the soft patties.

Wine Pairing

With the Vegetable Version

  • Grüner Veltliner
  • Sauvignon Blanc
  • Dry Rosé

Fresh acidity complements the vegetables.

With the Meat Version

  • Dry Riesling
  • Pinot Noir
  • Lighter Blaufränkisch

These wines balance richness without overpowering.

Non-Alcoholic

  • sparkling lemon water
  • apple juice
  • herbal tea

Final Notes

The vegetable version feels lighter and suitable for everyday cooking.

The meat version offers a heartier alternative.

Oats help retain moisture and improve texture.

Oven baking is ideal for a lighter finish.
