Peking-Style Chicken Fritters – A Central European Retro Classic

Peking-style chicken fritters are a Central European retro recipe that many people may remember from home cooking. Small pieces of chicken are marinated with eggs, onion, garlic, seasoning and cornstarch, then pan-fried into juicy chicken fritters with crisp, golden edges.
Despite the exotic-sounding name, this is not a traditional Beijing or Chinese dish. It is better understood as a Central European home-style retro recipe, loosely inspired by Asian flavours and adapted to ingredients commonly available in local kitchens.
The secret to good Peking-style chicken fritters is allowing the mixture to rest for 12–24 hours. This helps the flavours come together while the eggs and cornstarch create the characteristic texture during frying.

Ingredients
Base
• 1 kg chicken breast
• 3 onions, finely chopped
• 4 eggs
• 4 garlic cloves, crushed
• 2 small chilli peppers, finely chopped
Seasoning
• 1 tsp salt
• 1 tsp ground paprika
• 1 tsp ground black pepper
• 1 tsp Vegeta seasoning
• 4 tbsp ketchup
Liquid & binding ingredients
• 300 ml oil
• 1 packet cornstarch (200 g Solamyl)
How to make Peking-style chicken fritters
1. Prepare the mixture
Cut the chicken breasts into small strips or pieces. Add the finely chopped onions, garlic and chilli peppers.
Mix in the eggs, ketchup and all the seasonings. Add the cornstarch and combine thoroughly. Finally, stir in the oil.
2. Let it rest
Cover the mixture and refrigerate for 12–24 hours. During this time, the mixture will thicken slightly and the flavours will come together.
3. Pan-fry the fritters
Heat a thin layer of oil in a frying pan. Spoon small portions of the mixture into the pan and gently shape them into chicken fritters.
Cook over medium heat for approximately 3–4 minutes on each side, until golden brown and crisp around the edges.
