Confit Egg Yolk Spread — The Wine Bar Secret Butter
Some of the most memorable flavors in modern bistro cuisine come from the simplest techniques. One of them is the confit egg yolk spread, a creamy and elegant preparation that has quietly become a favorite in contemporary wine bars.
This confit egg yolk spread recipe transforms humble egg yolks into a silky, butter-like spread with a delicate richness and subtle depth of flavor. Slowly cooked in warm olive oil, the yolks develop a smooth texture that sits somewhere between soft butter and a luxurious sauce.
With the addition of garlic, chili and a touch of lemon zest, the result is a spread that feels both comforting and refined. Served on toasted bread or warm baguette, it becomes the perfect small plate to accompany a glass of wine.
In many modern wine bars, simple dishes like this are celebrated for their ability to highlight the beauty of good ingredients and careful technique.
Ingredients
Base
3–4 egg yolks (preferably free-range)
120 ml extra virgin olive oil
Aromatic Oil
2 garlic cloves, thinly sliced
a pinch of chili flakes
Seasoning
fine lemon zest
a pinch of sea salt or flaky salt
For Serving
crusty baguette or toasted bread
fresh chives or parsley
a few drops of high-quality olive oil
Method
1. Prepare the aromatic oil
Pour the olive oil into a small saucepan and add the sliced garlic and chili flakes.
Heat the oil gently to around 70–80°C (160–175°F). The oil should warm slowly and begin to release the aroma of the garlic without frying it.
2. Confit the egg yolks
Carefully place the egg yolks into the warm oil.
Let them cook slowly for about 20–25 minutes. The oil should remain at a low temperature and should not bubble.
During this time the yolks transform into a smooth, creamy texture with a soft, buttery consistency.
3. Create the spread
Remove the yolks carefully and place them in a small bowl.
Mash them gently with a fork and add:
1–2 tablespoons of the aromatic olive oil
a pinch of salt
a little lemon zest
The mixture will become a silky spread similar to soft butter.
4. Serving
Spread the confit egg yolk mixture over:
toasted baguette
sourdough toast
or small crostini
Finish with:
fresh chives or parsley
a few drops of olive oil
a pinch of flaky sea salt.
TGCC Chef Tip
For an extra layer of flavor, you can add:
finely grated Parmesan
or
a few drops of white balsamic vinegar.
Both options enhance the richness of the yolks and add a subtle complexity to the spread.
How to Serve
This spread works beautifully as a small plate in a wine bar setting.
Serve it with:
warm crusty baguette

simple crostini
It is the kind of dish that turns a quiet evening with wine into a small culinary moment.

Excellent choices include:
Riesling
Grüner Veltliner
Champagne or Crémant
Their freshness balances the buttery texture of the spread and highlights its delicate flavors.
