Pan con tomate with blue cheese – Spanish tomato bread

Pan con Tomate with Blue Cheese – Spanish Tapas for Wine

Crispy bread, ripe tomatoes, garlic, olive oil and a touch of blue cheese. A simple Spanish-inspired tapa that proves you don’t need much to enjoy a good glass of wine.

Pan con tomate is one of the simplest dishes in Spanish cuisine – and that is exactly where its charm lies. Toasted bread, ripe tomato, garlic, good olive oil and salt create a combination where the quality of the ingredients matters more than anything else.

In our version, we add a little finely grated blue cheese. It is not part of traditional pan con tomate, but its salty, distinctive flavour works beautifully with sweet, ripe tomatoes and turns a simple slice of bread into a small tapa made for sharing over a glass of wine.

And that is perhaps the best thing about this recipe. Although its inspiration comes from Spain, you do not need any exotic ingredients to make it at home. In summer, all you really need are ripe tomatoes, good bread and a few minutes of your time.

WHY THIS RECIPE

Pan con tomate is a perfect example of a dish where less really is more. It takes only a few minutes to prepare and works beautifully as an appetiser, a small tapa with wine or an easy summer snack for friends.

The blue cheese gives our version a slightly bolder character, while the essentials remain the same – tomato, crispy bread, garlic and good olive oil.

INGREDIENTS

Serves 2–4:

  • 4 thick slices of sourdough or rustic bread
  • 2–3 very ripe tomatoes
  • 1 garlic clove
  • 2–3 tbsp extra virgin olive oil
  • 40–60 g blue cheese
  • sea salt
  • freshly ground black pepper, to taste
  • a few basil leaves, to serve

METHOD

1. Toast the bread

Toast the bread in a dry pan, on a grill or in the oven until crisp and golden on the outside while still slightly soft inside.

2. Add the garlic

While the bread is still warm, gently rub it with a cut garlic clove.

Do not overdo it – the garlic should enhance the flavour of the tomatoes rather than overpower them.

3. Prepare the tomatoes

Cut the tomatoes in half and grate the flesh using the coarse side of a box grater. As you grate them, the tomato skin will naturally remain in your hand.

Season the grated tomato lightly with sea salt and add a drizzle of extra virgin olive oil.

4. Finish the pan con tomate

Spoon the tomato mixture generously over the toasted bread and finish with another light drizzle of extra virgin olive oil.

Grate or crumble a small amount of blue cheese over the top. Its salty, distinctive flavour creates a lovely contrast with the sweetness and freshness of ripe tomatoes.

Serve immediately while the bread is still crisp.

TGCC TIP

The secret to great pan con tomate is not the number of ingredients but their quality. Use the ripest tomatoes you can find, good rustic bread and an extra virgin olive oil that tastes delicious enough to enjoy on its own.

And be restrained with the blue cheese. Think of it as a final flavour accent – it should complement the tomato, garlic and olive oil rather than dominate them.

WHAT TO DRINK WITH IT

Pan con tomate is made for a glass of wine. The traditional version pairs beautifully with a dry Spanish white wine, Cava or a fresh rosé.

With the addition of blue cheese, you can also choose a more aromatic white wine with enough acidity to balance its richer, salty flavour.

And if you would like to give the pairing a Central European touch, try a dry Grüner Veltliner or Riesling. Their freshness and acidity work beautifully with ripe tomatoes, olive oil and blue cheese.

Simple tapas, good wine and a warm summer evening. Sometimes, that is all you need.
