Pan-Fried Peppers Stuffed with Cheese
Pan-fried peppers stuffed with cheese are a simple dish built around three things – tender golden peppers, hot melted cheese and the flavourful juices left in the pan.
The cheese-only version is excellent on its own. For a richer filling, add a little blue cheese, ham or a few slices of smoked sausage.
Simple ingredients, one pan and about 25 minutes.
Why use green peppers?
Green sweet peppers work particularly well for this recipe. Their flesh is firm enough to hold its shape during cooking, while pan-frying brings out a subtle sweetness.
The key is not to steam the peppers for too long. They should spend most of their cooking time uncovered in the pan, developing colour while retaining some texture.
Meanwhile, the cheese inside slowly melts into a creamy filling.
Ingredients
Serves 3–4
- 5–6 green sweet peppers
- processed cheese wedges – at least 1 wedge per pepper
- blue cheese – optional
- ham – optional
- a few thin slices of smoked sausage – optional, but recommended
- a little oil
- salt
- freshly ground black pepper
- sweet paprika – optional
Method
1. Prepare the peppers
Wash the peppers and cut off the tops, keeping the stems attached.
Remove the seeds and white membranes while keeping the peppers whole and ready for stuffing.
2. Stuff with cheese
Place processed cheese inside each pepper.
For a stronger flavour, add a small piece of blue cheese. You can also add a thin slice of ham or a few slices of smoked sausage.
Don’t overfill them with additional ingredients – the cheese should remain the star of the filling.
Close the peppers with their reserved tops.
3. Pan-fry the stuffed peppers
Heat a small amount of oil in a large frying pan and add the stuffed peppers.
Cook over medium heat, uncovered, turning regularly so that the peppers develop colour on all sides.
About halfway through cooking, cover the pan for 2–3 minutes. The trapped heat will help the cheese melt completely.
Remove the lid and continue cooking uncovered.
The aim is a lightly charred and golden exterior, peppers that still retain some texture and beautifully melted cheese inside.
4. Season
Season the peppers lightly with salt and freshly ground black pepper as you turn them.
Be careful with the salt – processed cheese, blue cheese, ham and smoked sausage can already be quite salty.
Towards the end, leave the peppers undisturbed against the hot pan for a little longer to develop deeper golden spots.
Serving
Serve your pan-fried peppers stuffed with cheese immediately while the filling is still hot and creamy.
Finish with freshly chopped chives and serve with fresh tomatoes.
And don’t forget the bread.
Fresh sourdough or crusty white bread is perfect for soaking up the delicious juices and melted cheese left in the pan.

The simple combination of processed cheese and blue cheese works beautifully without any meat at all.
You can easily adjust the filling:
- simple: processed cheese
- extra cheesy: processed cheese + blue cheese
- with ham: cheese + a thin slice of ham
- more robust: cheese + a few slices of good smoked sausage
For another layer of flavour, add one lightly crushed garlic clove to the pan towards the end of cooking. Let it become fragrant without allowing it to burn.
A few drops of fresh lemon juice over the finished peppers can also provide a refreshing contrast to the rich, creamy cheese.
Wine Pairing
A Brut sparkling wine works beautifully with melted cheese and pan-fried peppers. Its acidity and bubbles cut through the richness of the filling.
For still wine, try a fresh Grüner Veltliner or a dry Welschriesling.
For a non-alcoholic pairing, chilled apple juice or sparkling mineral water with lemon works equally well.
