Ingredients (Serves 2)

  • 4 slices of toast bread or brioche
  • 2 slices of quality ham
  • 80–100 g cheese (emmental or gruyère)
  • 1 tbsp butter

Béchamel:

  • 20 g butter
  • 20 g flour
  • 200 ml milk
  • pinch of salt
  • pinch of nutmeg

For Croque Madame:

  • 2 eggs

Method

  1. Béchamel
  • Melt butter, add flour, and stir briefly
  • Gradually add milk and whisk until smooth
  • Season with salt and nutmeg
  1. Assemble and toast
  • Place ham and some cheese on one slice
  • Cover with another slice
  • Toast in butter on both sides until golden
  1. Béchamel and baking
  • Transfer toasted sandwiches onto a tray
  • Spread béchamel on top
  • Add remaining cheese
  • Bake or grill for 5–8 minutes until golden
  1. Croque Madame
  • Fry eggs and place on top
