Slovak Demikát – Creamy Bryndza Soup with Bacon and Chive Oil

Slovak Demikát is a traditional Slovak bryndza soup built around a few simple ingredients that capture the character of Slovak cuisine – bryndza sheep cheese, potatoes, onion and caraway.

Our version stays close to those traditional flavours but gives the soup a more modern presentation. The creamy bryndza base is finished with crispy bacon, fresh bryndza and vibrant chive oil, while a touch of sweet paprika adds extra depth and a warmer colour.

And the little twist? Pear quickly sautéed in butter. Its delicate sweetness creates a surprisingly elegant contrast with the salty bryndza and smoky bacon without overpowering the character of the soup.

Simple Slovak flavours. Just served a little differently.

Ingredients

Serves 4

For the Demikát

  • 400 g potatoes
  • 200 g good-quality bryndza
  • 1 small onion or 2 shallots
  • 1 garlic clove
  • 700 ml vegetable or mild chicken stock
  • 150 ml heavy cream
  • ½ tsp crushed caraway seeds
  • ½ tsp sweet paprika
  • 1 tbsp butter
  • freshly ground black pepper
  • salt, if needed

For serving

  • 100 g smoked bacon
  • 50 g bryndza
  • 1 firm pear
  • 1 tsp butter
  • fresh chives

For the chive oil

  • 30 g fresh chives
  • 100 ml neutral oil

Method

1. Prepare the crispy bacon

Cut the bacon into pieces and slowly fry in a pan until golden and crispy.

Remove and place on a paper towel. Reserve a small amount of the rendered bacon fat for the soup base.

For a more elegant presentation, you can also cut some of the bacon into larger pieces and fry them until crisp to create bacon chips for serving.

2. Prepare the Demikát base

Add a little of the reserved bacon fat and the butter to a saucepan.

Add the finely chopped onion or shallots and gently cook over medium-low heat until soft and translucent.

Add the garlic and crushed caraway seeds and cook briefly until fragrant.

Stir in ½ teaspoon of sweet paprika and let it bloom for only a few seconds. Avoid frying the paprika for too long, as it can become bitter.

Peel the potatoes, cut them into small pieces and add them to the saucepan.

Pour in the stock and simmer for approximately 15–20 minutes, or until the potatoes are completely tender.

3. Make the creamy bryndza soup

Blend the cooked potatoes and stock until smooth.

Add the cream and gently heat through.

Remove the saucepan from the heat and stir in 200 g of bryndza. Blend briefly again if necessary until the Demikát is smooth and creamy.

Season with freshly ground black pepper.

Taste before adding any salt – both bryndza and smoked bacon are naturally salty.

Tip: Once the bryndza has been added, avoid bringing the soup to a vigorous boil. Gentle heat helps preserve its distinctive flavour and creamy texture.

Chive Oil

Bring a small saucepan of water to the boil.

Blanch the chives for approximately 15 seconds, then immediately transfer them to ice water.

Drain and dry thoroughly.

Blend the chives with the neutral oil until intensely green, then strain through a fine sieve or cheesecloth.

The result is a vibrant chive oil that adds freshness and a beautiful green contrast to the creamy Demikát.

Modern Twist – Butter-Sautéed Pear

Peel the pear and cut it into small cubes.

Melt the butter in a pan and quickly sauté the pear over relatively high heat for approximately 1–2 minutes.

The idea is not to cook the pear into a compote. It should remain firm and fresh, with just a touch of caramelisation on the surface.

Its subtle sweetness creates a beautiful contrast with the salty bryndza and smoky bacon.

Serving

Place a little crumbled fresh bryndza in the centre of a shallow soup bowl.

Add crispy bacon and a few pieces of butter-sautéed pear.

Pour the hot creamy Demikát around them.

Finish with drops of chive oil, finely chopped fresh chives and freshly ground black pepper.

For extra texture, serve with a few small croutons or a piece of toasted sourdough bread.

Wine Pairing

The distinctive flavour of bryndza and the richness of smoked bacon work particularly well with dry white wines that have good acidity.

Riesling – dry, mineral and refreshing.

Grüner Veltliner – crisp, slightly peppery and particularly good with the savoury character of the soup.

Welschriesling – lighter and fresh, allowing the bryndza to remain the star of the dish.

And if you want to keep the pairing completely Slovak, choose a dry white wine from the Small Carpathian or Nitra wine region.

Slovak Demikát proves that traditional food does not have to lose its identity to feel contemporary.

Sometimes all it takes is bryndza, bacon, chives – and a few pieces of pear.
