Fresh Rice Salad with Mango, Red Beans and Lime Dressing

Introduction

This rice salad with mango and red beans is a fresh and colourful dish combining the natural sweetness of ripe mango, delicate rice and hearty red kidney beans.

Its character comes from a mango and lime dressing with honey, cumin and a touch of chilli, creating a refreshing sweet-and-sour contrast. Serve it as a light lunch or dinner, or as a colourful side dish with grilled meat or fish.

Ingredients

Serves 4:

  • 250 g cooked and completely cooled jasmine or basmati rice
  • 1 can red kidney beans (about 240 g drained)
  • 1 large ripe but firm mango
  • 2–3 tbsp finely chopped fresh coriander or flat-leaf parsley
  • 1 small shallot, very finely chopped – optional

For the mango and lime dressing

  • juice of 1½ limes
  • 3 tbsp extra virgin olive oil
  • about ¼ of the mango
  • 1 tsp honey
  • ½ tsp ground cumin
  • a pinch of chilli
  • ½–¾ tsp salt
  • freshly ground black pepper

Method

1. Prepare the rice

Cook the rice according to the package instructions, keeping it light and fluffy with separate grains. Allow it to cool completely.

Before assembling the salad, gently fluff the rice with a fork.

2. Prepare the mango and beans

Peel the mango and cut it into small cubes. Set aside about a quarter of the mango for the dressing.

Drain the kidney beans, rinse thoroughly under cold water and allow them to drain well.

3. Make the mango and lime dressing

Mash the reserved mango with a fork or blend it into a smooth purée.

Add the lime juice, olive oil, honey, cumin and a small pinch of chilli. Season with salt and freshly ground black pepper and mix thoroughly.

The dressing should taste fresh, distinctly citrusy and gently spicy. Don’t worry if it seems quite intense at this stage – the rice will naturally soften the flavours once everything is combined.

4. Assemble the salad

In a large bowl, combine the cooled rice, red kidney beans, mango cubes and chopped coriander or parsley.

If using shallot, add it very finely chopped.

Pour over the mango and lime dressing and gently toss everything together. The rice should be evenly coated while the pieces of mango remain intact.

5. Let the flavours develop

Place the salad in the refrigerator for about 15–20 minutes before serving.

Taste once more before bringing it to the table. If it needs extra freshness, add another squeeze of lime. If it tastes too sweet or slightly flat, a small pinch of salt will help bring the flavours together.

The balance between sweet mango, sharp lime, salt and gentle chilli heat is what makes this simple salad work.

Serving

Serve the salad chilled or at room temperature. Finish with a few fresh mango cubes and some chopped coriander.

It works beautifully as a light lunch or dinner, but can also be served alongside grilled chicken, fish or prawns.

Tip

Choose a ripe but still firm mango for this recipe. An overly soft mango will break down when the salad is tossed, while firmer pieces provide a pleasant contrast to the rice and beans.

The rice is equally important. Avoid overcooking it and allow it to cool completely before assembling the salad. This keeps the salad light and allows each ingredient to retain its own texture.

Wine Pairing

The sweet mango, fresh lime and gentle chilli work particularly well with a crisp white wine with lively acidity.

Try a Sauvignon Blanc or a dry Riesling. For a more aromatic pairing that highlights the salad’s exotic fruit character, choose a dry Muscat – its floral and fruity notes pair beautifully with mango.
