Cauliflower Spread with Feta and Roasted Garlic
This cauliflower spread with feta and roasted garlic is an easy way to turn simple cauliflower into a creamy and flavourful homemade spread. The key is to use roasted cauliflower rather than boiled cauliflower – roasting prevents it from becoming watery while bringing out subtle nutty and caramelised flavours.
We combine the roasted cauliflower with feta cheese, olive oil and roasted garlic. Feta gives the cauliflower spread its creamy texture and pleasant saltiness, while roasted garlic adds a mellow, slightly sweet flavour.
To give the roasted cauliflower spread a fresher and slightly sharper finish, we also add a small amount of freshly crushed garlic.
A simple homemade spread made with just a handful of ingredients, where properly roasted cauliflower does most of the work.
Why This Recipe Works
- Roasted cauliflower has a deeper, slightly nutty flavour compared with boiled cauliflower.
- Roasting prevents the cauliflower from absorbing extra water, keeping the cauliflower spread thick and creamy.
- Feta adds natural saltiness and a distinctive savoury flavour.
- Roasted garlic is mild and slightly sweet, complementing the caramelised cauliflower.
- A little fresh garlic provides contrast and a fresher, sharper finish.
- Olive oil brings the flavours together and helps create a creamy texture.
- This easy cauliflower spread relies on just a few good-quality ingredients.
Ingredients (4–6 servings)
- 1 small cauliflower
- 150–200 g feta cheese
- 3–4 garlic cloves
- ½–1 fresh garlic clove
- 2–3 tbsp olive oil
- freshly ground black pepper
- salt, if needed
Optional:
- a little lemon juice
- finely grated lemon zest
- a pinch of chilli or smoked paprika
- fresh chives or parsley
Method
- Preheat the oven to 200°C (390°F).
- Cut the cauliflower into small florets and arrange them on a baking tray. Reserve a few smaller florets for serving if you like.
- Drizzle the cauliflower with olive oil and add 3–4 unpeeled garlic cloves.
- Roast for approximately 25–30 minutes, until the cauliflower is tender and the edges begin to turn golden brown.
- Allow the roasted cauliflower to cool slightly. Squeeze the soft roasted garlic from its skins.
- Place the cauliflower, roasted garlic and crumbled feta in a food processor or blender.
- Add 1–2 tablespoons of olive oil and blend briefly. The roasted cauliflower spread does not need to be completely smooth – a slightly rustic texture works beautifully.
- Add about ½ clove of freshly crushed garlic and some freshly ground black pepper.
- Taste and add more fresh garlic or a little salt if necessary. Be careful with the salt, as feta is naturally salty.
- Refrigerate the cauliflower and feta spread for at least 30 minutes before serving to allow the flavours to develop.
TGCC Tip
The secret to a flavourful cauliflower spread is to roast the cauliflower properly rather than simply cooking it until tender.
Let some of the edges turn golden brown and lightly caramelised. Roasting creates deeper, slightly nutty flavours that you would not get from boiled cauliflower and also helps keep the finished spread thick and creamy.
Another small detail that makes a difference is the combination of roasted and fresh garlic. Roasted garlic is mellow and slightly sweet, while a small amount of fresh garlic gives the spread a sharper, fresher finish.
For a more Mediterranean-style cauliflower and feta spread, add a little lemon juice and finely grated lemon zest. A small spoonful of tahini, a pinch of chilli or some smoked paprika also works very well.
