INGREDIENTS

  • 2–3 medium zucchinis
  • 1 small shallot or white onion
  • good-quality vegetable stock
  • butter
  • finely grated Parmigiano Reggiano
  • freshly ground white pepper

METHOD

  1. Clean the zucchini and cut into small pieces.
  2. Gently soften the shallot in butter, without coloring.
  3. Add the zucchini, stir briefly, and cover with stock just to the surface.
  4. Simmer gently until completely tender.
  5. Blend until smooth.
  6. Add the Parmigiano Reggiano and blend briefly again.
  7. Season with white pepper. Salt is usually unnecessary.

CENTRAL EUROPEAN TOUCH (OPTIONAL)

  • a micro pinch of nutmeg
  • a small spoon of sour cream or crème fraîche when serving
  • butter instead of olive oil, without apology

SERVING

Serve warm, not boiling.
With simple bread or a small crouton.
