Creamy Smoked Mackerel Spread with Capers

Introduction

Smoked Mackerel Spread with Capers is a simple fish spread with a rich smoky flavour, smooth creamy texture and fresh acidity from lemon.

The base combines smoked mackerel with cream cheese spread and a small amount of sour cream. Some of the capers are blended directly with the mackerel, distributing their salty and tangy flavour throughout the spread, while the remaining capers are finely chopped and folded in at the end.

The result is a smooth and creamy smoked mackerel spread that needs very few additional ingredients.

Serve it on fresh or lightly toasted rustic bread with pickled cucumber, which provides an excellent acidic and crunchy contrast to the rich smoked fish.

Why This Recipe Works

Smoked mackerel has a naturally rich flavour and high fat content. Cream cheese spread creates a smooth base, while a small amount of sour cream makes the spread lighter and creamier.

The capers are used in two ways. Some are blended directly into the spread, while the rest are finely chopped and added at the end for small bursts of stronger flavour.

Lemon and pickled cucumber provide acidity that balances the richness of the smoked mackerel and creamy base.

Ingredients – Serves 4

  • 250 g (9 oz) smoked mackerel flesh, skin and bones removed
  • 100 g (3½ oz) cream cheese spread
  • 2–3 tbsp sour cream
  • 1½ tbsp capers
  • 1 tsp Dijon mustard
  • 1–2 tsp fresh lemon juice
  • ½ tsp finely grated lemon zest
  • ½ tsp caper brine, optional
  • freshly ground black pepper
  • salt, only if needed

To Serve

  • fresh or lightly toasted sourdough or rustic bread
  • pickled cucumbers
  • red onion, thinly sliced
  • a few capers
  • lemon wedges

Method

1. Prepare the Smoked Mackerel

Remove the skin from the smoked mackerel and carefully check the flesh for any remaining bones.

Break the fish into smaller pieces and place it in a food processor.

2. Prepare the Creamy Base

Add the cream cheese spread, 2 tablespoons of sour cream, Dijon mustard, lemon juice and approximately half of the capers.

For a slightly stronger caper flavour, add about ½ teaspoon of caper brine.

3. Blend Until Smooth

Blend everything until smooth and creamy.

If the spread is too thick, add another tablespoon of sour cream. Add it gradually – the finished smoked mackerel spread should remain thick enough to hold its shape and spread easily after chilling.

4. Add the Remaining Capers

Finely chop the remaining capers and fold them into the finished spread.

Add the finely grated lemon zest and freshly ground black pepper.

5. Adjust the Flavour

Taste the spread and add a little more lemon juice or caper brine if needed.

Only add salt at the very end and if necessary. Both smoked mackerel and capers are naturally quite salty.

6. Chill

Refrigerate the smoked mackerel spread for at least 30–60 minutes before serving.

Chilling allows the flavours to develop and gives the spread a slightly firmer texture.

Serving

Serve the Creamy Smoked Mackerel Spread with Capers on fresh or lightly toasted rustic bread.

It is particularly good with pickled cucumber. Its acidity and crunch balance the creamy texture and rich smoky flavour of the mackerel.

Add thinly sliced red onion, a few capers or a small squeeze of fresh lemon juice according to taste.

TGCC Tip

For the best texture and flavour, divide the capers into two portions.

Blend the first portion with the smoked mackerel so their flavour becomes part of the creamy base. Finely chop the remaining capers and fold them in at the end.

This keeps the spread smooth and creamy while adding occasional bursts of salty, tangy caper flavour.

If serving the spread with pickled cucumber, use the lemon juice carefully. Both provide acidity, and the aim is to balance and highlight the smoked mackerel rather than overpower it.

Wine Pairing

Smoked mackerel, capers and pickled cucumber pair well with a fresh, dry white wine with good acidity.

Try a dry Riesling, crisp Sauvignon Blanc or mineral Grüner Veltliner. Avoid heavily oaked wines, which can overpower the smoky fish and sharp capers.
