Chicken Breasts with Ham, Cheese, Fried Egg and Mushroom Sauce
Central European comfort food that needs no apology
Chicken breasts with ham and cheese are the kind of dish that does not need complicated techniques to work. Well-seared chicken, good-quality ham, melted cheese and a sauce that brings everything together are more than enough.
In this version, we add a creamy mushroom sauce and a fried egg with a runny yolk.
And it is the yolk that makes the difference. Once broken, it slowly blends into the mushroom sauce, creating an even richer, silkier layer.
This is not a light dish. Nor is it trying to be.
It is simply honest Central European comfort food.

Ingredients
Chicken Breasts
• 4 chicken breasts
• 4–8 thin slices of good-quality ham
• 4 slices of cheese – Gouda, Emmental or Gruyère
• 1 tbsp butter
• 1 tbsp oil
• salt
• freshly ground black pepper
Mushroom Sauce
• 250 g button mushrooms or mixed mushrooms
• 1 small shallot
• 1 garlic clove
• 1 tbsp butter
• 100 ml dry white wine
• 200 ml cooking cream
• 100 ml chicken stock
• 1 tsp Dijon mustard
• freshly ground black pepper
• salt, as needed
To Finish
• 4 eggs
• a little butter for frying
• chives or microgreens
• freshly ground black pepper
How to Make Chicken Breasts with Ham and Cheese
1. Prepare the Chicken
Gently pound or butterfly the chicken breasts so that they are roughly even in thickness.
Season lightly with salt – both the ham and cheese will add more saltiness – and finish with freshly ground black pepper.
Heat the oil and butter in a frying pan and sear the chicken for approximately 2–3 minutes on each side.
At this stage, the goal is not to cook the chicken completely, but to develop a beautiful golden surface.
2. Make the Mushroom Sauce
Remove the chicken and add the sliced mushrooms to the same pan.
Do not overcrowd the pan. Mushrooms need high heat and enough space to brown rather than steam in their own liquid.
Once they have developed some colour, add the butter and finely chopped shallot. Sauté briefly, add the garlic and deglaze the pan with the white wine.
Allow the wine to reduce by approximately half.
Add the chicken stock, cream and Dijon mustard. Simmer gently for a few minutes until the sauce becomes smooth and slightly thickened.
Season with freshly ground black pepper and only then add salt if needed.
3. Bake the Chicken
Place the seared chicken breasts in an ovenproof dish, or leave them in the pan if it is oven-safe.
Top each chicken breast with ham and cheese.
Bake at 200°C / 390°F for approximately 6–10 minutes, depending on the thickness of the chicken, until the cheese has melted and the chicken is cooked through.
4. Fry the Eggs
Just before serving, heat a little butter in a frying pan and prepare four sunny-side-up eggs.
The whites should be set, but keep the yolks runny.
For this recipe, that matters.
TGCC Tip
The yolk is part of the sauce.
The fried egg is not there simply because it looks good on the plate. Once you cut into it, the runny yolk blends with the mushroom sauce, creating an even richer, almost velvety texture.
For that reason, do not make the mushroom sauce too thick. Keep it slightly looser and let the yolk have the final word.
And one more detail: salt the mushrooms only after they have browned. We want them to develop colour first rather than cook in their own liquid.
Serving
Spoon the mushroom sauce onto the plate and place the chicken breast topped with ham and melted cheese on top.
Finish with a freshly fried egg and garnish with chives or microgreens.
Serve with:
• steamed or buttered rice
• mashed potatoes
• roasted or pan-fried baby potatoes
• a simple green salad with a tangy vinaigrette

Wine Pairing
Chardonnay – preferably dry, with a subtle touch of oak. It has enough body to stand up to the creamy mushroom sauce, melted cheese and rich egg yolk.
Pinot Blanc – a fresher, more elegant alternative that complements rather than competes with the mushrooms.
Pinot Noir – if you prefer red wine, a lighter Pinot with good acidity pairs beautifully with both mushrooms and chicken.
