Method

1. Prepare the Shallots

Melt butter in a pan.

Add shallots.
Cook slowly for 8–10 minutes until soft and lightly sweet.

Add:

  • cranberries
  • honey
  • vinegar
  • salt

Simmer for about 10 minutes until thick and glossy.

Let cool completely.

2. Make the Cheese Cream

In a bowl, mix:

  • cheese
  • cream
  • salt
  • pepper

Whisk until smooth.

Chill for 15 minutes.

3. Prepare the Bread

Slice bread.

Drizzle lightly with olive oil.
Toast in a pan or oven until golden.

Let cool slightly.

4. Assemble

On each toast:
