Chicken Paprikash with Oyster Mushrooms – A Creamy Twist on a Classic
Introduction
Chicken Paprikash with Oyster Mushrooms combines the familiar comfort of traditional paprikash with the tender, meaty texture of oyster mushrooms. The result is a rich and creamy dish rooted in Central European cooking, but with a slightly more modern character.
The secret lies in how the paprika is used. Part of the sweet paprika is added while sautéing the chicken and oyster mushrooms, allowing its flavour to bloom in the fat and become part of the base. The rest goes into a mixture of cream and flour, giving the sauce its smooth texture and beautiful paprika colour.
A little vinegar and sugar are added at the very end. Not enough to make the sauce sweet and sour – just enough to balance the richness of the cream and bring the paprika forward.
And the side dish? Classic elbow macaroni. Because not every tradition needs an update.
Why This Recipe Works
Oyster mushrooms have a firm, almost meaty texture and absorb the flavours of the paprika sauce beautifully. Together with the chicken, they make the paprikash more substantial while adding another layer of texture.
Using sweet paprika at two different stages also creates more depth. The first addition develops its flavour in the sautéed base, while the second brings a gentler paprika note to the creamy sauce.
Sweet cream keeps the sauce smooth and mellow without adding the sharper acidity of sour cream.
Ingredients – Serves 4
- 600 g / 1.3 lb boneless chicken thighs or chicken breast
- 300 g / 10.5 oz oyster mushrooms
- 2 large onions
- 2 tbsp lard or neutral cooking oil
- 2 tbsp sweet paprika
- 2 garlic cloves
- ½ tsp caraway seeds
- 300–400 ml / 1¼–1⅔ cups chicken stock or water
- 200 ml / ¾ cup + 1 tbsp cooking cream
- 1–1½ tbsp plain flour / all-purpose flour
- 1 tsp vinegar
- ½–1 tsp sugar
- salt
- freshly ground black pepper
To Serve
- 300–350 g / 10.5–12 oz elbow macaroni
Method
1. Prepare the Base
Finely chop the onions and slowly sauté them in the lard or oil until golden and soft.
Add the chopped garlic and cook briefly until fragrant.
2. Sauté the Chicken and Oyster Mushrooms
Cut the chicken into bite-sized pieces. Clean the oyster mushrooms and tear or slice them into larger strips.
Add the chicken to the onions and sauté until lightly browned on all sides.
Add the oyster mushrooms and continue cooking until they release some of their moisture and begin to brown.
3. Add the First Layer of Paprika
Reduce the heat and add approximately half of the sweet paprika.
Stir briefly so that the paprika combines with the fat, chicken and oyster mushrooms.
Be careful not to burn the paprika, as it can quickly become bitter.
Add the caraway seeds and season with salt and freshly ground black pepper.
4. Add the Stock and Simmer
Pour in enough chicken stock or water to create a generous sauce without completely submerging the meat.
Cover and simmer gently for approximately 25–30 minutes, until the chicken is tender and the oyster mushrooms have absorbed the flavours of the paprika base.
5. Prepare the Creamy Paprika Mixture
Whisk the cooking cream with the flour and the remaining sweet paprika until smooth.
Add a small amount of the hot cooking liquid and whisk again to temper the cream.
Gradually pour the mixture into the paprikash while stirring continuously.
6. Finish the Sauce
Simmer gently for another 5–10 minutes, allowing the flour to cook completely and the sauce to become smooth and creamy.
If the sauce becomes too thick, simply add a little more chicken stock or water.
7. Balance the Flavours
Finally, add approximately 1 teaspoon of vinegar and ½ teaspoon of sugar.
Stir, taste and adjust if necessary.
Neither the vinegar nor the sugar should be immediately noticeable. Their purpose is simply to balance the sweetness of the onions and richness of the cream while bringing out the flavour of the paprika.
Adjust the seasoning with salt and freshly ground black pepper.
Serving
Serve Chicken Paprikash with Oyster Mushrooms hot with classic elbow macaroni.
The simple pasta catches the creamy paprika sauce while allowing the tender chicken and meaty oyster mushrooms to remain the stars of the dish.
For the final touch, add a very light dusting of good-quality sweet paprika.

The creamy paprika sauce pairs beautifully with a fresh Grüner Veltliner or a dry Riesling. Their acidity cuts through the richness of the cream without overwhelming the oyster mushrooms.
If you prefer red wine, choose a lighter, fruit-forward Blaufränkisch, ideally without heavy oak.
