Budapest-Style Cottage Cheese Spread with Roasted Red Pepper

Budapest-style cottage cheese spread is one of those Central European classics many of us remember from childhood, delicatessen counters and simple breakfasts at home. The basic combination is straightforward – cottage cheese, butter, paprika and onion. Its simplicity, however, has inspired countless homemade variations.

The spread also belongs to a broader Central European family of paprika-seasoned cheese spreads. One of its close relatives is the well-known Liptauer, traditionally made with fresh cheese or curd and, depending on the region, seasoned with paprika, caraway seeds, onion, mustard or capers. Budapest-style spread tends to be simpler, milder and more distinctly focused on paprika.

In our version, we add roasted red pepper to the classic base. It brings natural sweetness, juiciness and a deeper flavour. Sweet paprika reinforces its traditional character, while a small amount of smoked paprika adds a subtle smoky note.

We blend the cottage cheese with butter until smooth and creamy, but fold in the roasted pepper afterwards. This way, small pieces of sweet pepper remain throughout the spread, adding both flavour and texture.

A simple classic with one small twist that makes a surprisingly big difference.

Why This Recipe Works

  • Roasted red pepper adds natural sweetness and a deeper flavour.
  • Sweet paprika preserves the characteristic taste of a traditional Budapest-style spread.
  • A small amount of smoked paprika adds subtle smokiness without overpowering the other flavours.
  • Blending the cottage cheese with butter creates a smooth and creamy base.
  • Small pieces of roasted pepper provide a pleasant contrast to the creamy texture.
  • Finely chopped onion adds freshness and a gentle sharpness.
  • The result stays true to the original idea while offering a richer and more complex flavour.

Ingredients (4–6 servings)

  • 250 g full-fat cottage cheese or smooth curd cheese
  • 50 g softened butter
  • 1 large red bell pepper
  • 1 small onion or ½ large onion
  • 1 tsp sweet paprika
  • ¼ tsp smoked paprika
  • salt to taste
  • freshly ground black pepper

Optional:

  • a pinch of hot paprika or chilli
  • fresh chives or parsley for garnish

Method

  1. Preheat the oven to 220–230°C (425–445°F).
  2. Place the red pepper on a baking tray and roast for approximately 20–25 minutes, until the skin has darkened in several places and begins to blister.
  3. Transfer the hot pepper to a covered container or bowl and leave it to steam for about 10 minutes.
  4. Remove the skin, stem and seeds. Allow the pepper to cool completely, then finely chop the flesh.
  5. Blend the cottage cheese with the softened butter until smooth and creamy.
  6. Finely chop the onion and add it to the cottage cheese mixture.
  7. Add the sweet paprika and smoked paprika.
  8. Fold in the finely chopped roasted pepper.
  9. Season with salt and freshly ground black pepper. For a spicier version, add a pinch of chilli or hot paprika.
  10. Refrigerate the spread for at least 30–60 minutes before serving to allow the flavours to develop.

TGCC Tip

The secret to this Budapest-style spread is the combination of roasted red pepper, sweet paprika and smoked paprika.

The roasted pepper provides sweetness and juiciness, sweet paprika gives the spread its characteristic flavour, while smoked paprika adds a subtle background note.

Use smoked paprika sparingly. Start with about ¼ teaspoon – it should enhance the roasted pepper rather than dominate the spread.

For a more interesting texture, do not blend the roasted pepper together with the cottage cheese. Blend the cottage cheese and butter separately until smooth, then finely chop the roasted pepper and fold it in afterwards. You will get a beautifully creamy spread with small pieces of sweet roasted pepper in every bite.

Serving Suggestions

  • fresh sourdough bread
  • toasted baguette slices
  • rye or wholegrain bread
  • radishes
  • fresh cucumber
  • fresh red pepper
  • chives or parsley

This Budapest-style spread is perfect for breakfast or brunch, but it also works beautifully as an easy appetiser. Thanks to its smooth texture, you can use it for canapés or open-faced sandwiches as well.

Wine Pairing

The creamy cottage cheese, sweetness of the roasted pepper and subtle smoky note pair particularly well with fresh white wines with lively acidity.

Recommended wines:

  • Grüner Veltliner
  • Welschriesling
  • dry Riesling
  • dry Brut sparkling wine

The freshness and acidity of these wines balance the creamy texture of the spread while allowing the sweet roasted pepper to shine.

If you prefer beer, a classic pale lager is also an excellent match.
