Ingredients

Makes approximately 4 servings:

  • 120 g smoked sheep’s milk Oštiepok cheese
  • 3 tbsp Greek yoghurt
  • 1 tbsp butter, softened
  • 1 small garlic clove
  • 1 tsp mustard
  • 1–2 spring onions or fresh chives
  • a pinch of sweet or smoked paprika
  • freshly ground black pepper
  • salt, to taste

Optional:

  • a little finely grated lemon zest

Method

1. Prepare the Oštiepok

Finely grate the smoked Oštiepok cheese.

A fine grate helps create a creamy spread while still retaining some of the natural texture of the cheese.

2. Make the Creamy Base

In a bowl, combine the Greek yoghurt, softened butter, mustard and finely grated or crushed garlic.

Mix until smooth and creamy.

3. Bring the Flavours Together

Add the grated Oštiepok and gently combine.

Season with freshly ground black pepper and a pinch of sweet or smoked paprika.

Taste before adding any salt – smoked Oštiepok already has a distinctive salty flavour, so you may not need much at all.
