INGREDIENTS (2 servings)
- 1 large ripe avocado (soft, not mushy)
- 2 eggs
- 1 tsp Dijon mustard
- 1 tsp fresh lemon juice
- 1 tbsp Greek yogurt or mascarpone (luxury touch 😎)
- 1 tsp extra virgin olive oil
- Sea salt (Maldon recommended)
- Freshly ground black pepper

METHOD

→ 7 minutes in gently boiling water
Cool in cold water.
Peel and chop into small pieces.

Mash gently with a fork.
