Ingredients (Serves 4–6)

  • 300 g pork cracklings
  • 1 small red onion (very finely chopped)
  • 2–3 tbsp apple purée
    (or 1 small tart apple, finely grated)
  • 1 tsp Dijon mustard
  • 1 small chilli (deseeded, very finely chopped)
  • Salt to taste
  • Freshly ground black pepper
  • A few drops of lemon juice or apple cider vinegar

Method

  • Grind or blend half of the cracklings into a smooth base
  • Finely chop the remaining half to retain texture
  • In a bowl, combine cracklings with onion, apple purée and chilli
  • Add mustard
  • Mix into a creamy yet slightly rustic consistency
  • Season with salt, pepper and a few drops of acidity
  • Let rest for 10–15 minutes to allow flavours to develop
