Inspiration

I first tasted it after a perfect kudu steak at
The Hussar Grill In Cape Town.

A glass of South African red wine.
Brandy in the sauce.
Meat that melted under the knife.

And then this pudding.

Nothing clashed.
The brandy didn’t fight the wine.
Everything worked.

That evening, everything was allowed.

INGREDIENTS (6 servings)

Original ingredients, with gentle enhancements

  • 250 g dates, roughly chopped
  • 250 ml water
  • 5 ml bicarbonate of soda
  • 100 g butter, softened
  • 200 ml caster sugar
  • 1 tbsp Slovak honey
  • 1 egg
  • 250 ml plain flour
  • 5 ml baking powder
  • 100 g pecan nuts, chopped
  • 50 g dried apricots, finely chopped
  • Zest of ½ organic orange

FOR THE SYRUP

  • 250 ml sugar
  • 120 ml water
  • 120 ml brandy
  • 30 ml butter
  • ½ tsp ground cinnamon
  • 1 vanilla pod

METHOD

Date Base

Combine dates and water.
Bring to the boil.
Remove from heat and add bicarbonate of soda.
Let cool.

Creamed Base

Cream together:

• butter
• sugar
• honey
• orange zest

Add the egg.

Sift flour with baking powder.
Fold gently into the mixture together with the dates.

Stir in:

• pecans
• apricots

Goal: soft, moist, well-balanced batter.

Baking

180 °C
Middle rack
30–40 minutes

Bake uncovered.
The top should be golden-brown and gently springy.

Syrup

Boil sugar, water, butter and vanilla for 1–2 minutes.
Add brandy and cinnamon.

Pour hot syrup over the warm pudding.

Let it soak.

FINAL TOUCH

Serve with:

• lightly whipped cream
or
• vanilla custard

Nothing more. Let the dates speak.
