Moravanka Spread

An Old Meat-Grinder Classic Discovered at a Housewarming Party

Some recipes are not born in professional kitchens or published in cookbooks. They appear at family gatherings, village celebrations, garden parties, and housewarming events. That is exactly how we discovered this Moravanka Spread, generously shared by Peter Atalovič during the housewarming celebration of his new apartment.

At first glance, it looks like a simple retro spread made from Moravanka pickled vegetables, salami, eggs, and mayonnaise. One bite, however, quickly explains why recipes like this survive for generations. The tangy vegetables, the smoky character of the salami, the richness of eggs, and the creamy texture of mayonnaise create a combination that pairs beautifully with fresh bread, toasted baguette, or a casual gathering with friends.

The original recipe belongs to the old Central European “meat-grinder tradition.” In the past, all ingredients were simply passed through a meat grinder, mixed with mayonnaise, and served. While the original version remains delicious, a few small adjustments can elevate the spread without losing its authentic character.

Why This Recipe Works

  • Moravanka provides acidity, crunch, and freshness.
  • Salami adds smoky depth and savory character.
  • Eggs create richness and a creamy texture.
  • Mayonnaise binds everything together.
  • Simple ingredients produce a surprisingly addictive result.

The result is a rustic spread that tends to disappear from the table faster than expected.

Ingredients (6–8 servings)

  • 1 jar Moravanka mixed pickled vegetables
  • 300 g (10.5 oz) smoked salami
  • 3 hard-boiled eggs
  • 200–250 g (7–9 oz) quality mayonnaise
  • salt to taste

Optional Enhancements

  • 1 tsp Dijon mustard
  • 1 tsp Moravanka brine
  • freshly ground black pepper
  • finely chopped chives

Instructions

Drain the Moravanka thoroughly and allow it to dry for a few minutes.

Pass the vegetables, salami, and eggs through a meat grinder or pulse them in a food processor.

Add the mayonnaise and mix until combined.

Season with salt if needed.

Refrigerate for at least 30 minutes before serving to allow the flavors to develop.

Serve with fresh bread or lightly toasted baguette slices.

TGCC Tip

The biggest improvement comes not from adding new ingredients, but from changing the texture.

Instead of grinding everything together, try a mixed approach:

  • Finely grind or chop the Moravanka.
  • Dice the salami into small cubes.
  • Finely chop two eggs.
  • Mash one egg with a fork.

The spread remains creamy while gaining a much more interesting texture and appearance.

TGCC Deluxe Version

To bring this traditional recipe into a more modern style, add:

  • 1 tsp Dijon mustard
  • 1 tsp Moravanka brine
  • replace half of the mayonnaise with sour cream
  • a handful of freshly chopped chives

The result stays true to the original recipe while becoming lighter, fresher, and more refined.

Serving Suggestions

  • sourdough bread
  • toasted baguette slices
  • rye bread
  • homemade crackers
  • pickles
  • radishes
  • spring onions
  • fresh chives

Wine Pairing

Moravanka Spread pairs best with fresh, high-acid wines that balance its creamy texture.

Recommended wines:

  • Grüner Veltliner
  • Müller-Thurgau
  • Riesling
  • Rosé Blaufränkisch
  • Brut sparkling wine

The freshness of these wines beautifully complements the richness of the mayonnaise while enhancing the vegetable notes of the Moravanka.
