Pumpkin Gnocchi with Cheddar Sauce, Brown Butter and Sage

When Pumpkin Meets Cheddar, Brown Butter and Sage

Some autumn recipes feel comforting before you even take the first bite.

Pumpkin gnocchi with cheddar sauce is one of them.

Roasted pumpkin gives these homemade gnocchi their natural sweetness, beautiful colour and soft texture. Instead of hiding that delicate flavour under a heavy sauce, we pair it with mature cheddar, nutty brown butter and crispy sage.

Brown butter is the small detail that transforms the dish. Its toasted, nutty character enhances the sweetness of the pumpkin, sage brings an unmistakable autumn aroma, and mature cheddar adds just enough sharpness and savoury depth.

The result is creamy without being heavy.

Rustic, yet refined.

Exactly the kind of comfort food October calls for.

Why This Recipe Works

With homemade pumpkin gnocchi, the key is finding the right balance between pumpkin moisture, flour and sauce.

That is why we roast the pumpkin rather than boil it. Roasting removes excess moisture while concentrating its natural flavour. Less moisture means less flour – and lighter, softer gnocchi.

In this recipe:

  • Roasted pumpkin brings natural sweetness, colour and flavour
  • Parmesan adds savoury depth and umami
  • Nutmeg enhances the warm autumn character
  • Mature cheddar creates a rich, creamy sauce
  • Brown butter adds toasted, nutty notes
  • Sage brings aroma and a crisp contrast
  • Gnocchi cooking water helps create a smooth, glossy sauce

The result is tender homemade pumpkin gnocchi that still taste of pumpkin – not simply flour and cheese.

Ingredients (4 Servings)

For the Pumpkin Gnocchi

500 g Hokkaido or butternut squash

250–300 g plain flour

1 egg yolk

40 g finely grated Parmesan

½ tsp salt

A pinch of freshly grated nutmeg

Freshly ground black pepper

For the Cheddar Sauce

150 g mature cheddar

150 ml cooking cream or heavy cream

50–80 ml gnocchi cooking water

Freshly ground black pepper

Salt, if needed

For the Brown Butter and Sage

60 g butter

8–12 fresh sage leaves

To Finish

Finely grated Parmesan

Freshly ground black pepper

Crispy sage leaves

Method

1. Roast the Pumpkin

Cut the pumpkin into smaller pieces and roast at 200°C / 390°F for approximately 25–35 minutes, until completely tender and lightly caramelised around the edges.

Blend or mash until smooth.

You will need approximately 300 g of thick pumpkin purée for the gnocchi.

Allow it to cool completely.

A little TGCC tip: Roast the pumpkin rather than boiling it. Roasting removes some of its moisture while concentrating the flavour. The drier the purée, the less flour you will need – and the lighter your pumpkin gnocchi will be.

2. Make the Pumpkin Gnocchi Dough

Combine the cooled pumpkin purée with the egg yolk, Parmesan, salt, nutmeg and approximately 250 g of flour.

Mix gently.

If the dough is too sticky to handle, gradually add a little more flour.

Do not overwork it.

The dough should remain soft and slightly sticky. Too much flour will turn delicate pumpkin gnocchi into dense dumplings.

3. Shape the Gnocchi

Lightly flour your work surface.

Divide the dough into several portions and gently roll each one into a long rope.

Cut into pieces approximately 2 cm wide.

Leave them rustic or gently roll each piece over the back of a fork or a gnocchi board to create traditional ridges.

4. Cook the Gnocchi

Cook the pumpkin gnocchi in batches in a large pot of gently boiling salted water.

Once they rise to the surface, cook for another 30–60 seconds.

Remove with a slotted spoon.

Before draining the water, reserve approximately 150 ml of the gnocchi cooking water.

5. Brown Butter and Sage

Melt the butter in a wide pan over medium-low heat.

Add the sage leaves.

Allow the butter to foam and cook gently until the milk solids turn golden brown and develop a distinctly nutty aroma.

Remove the crispy sage leaves and reserve them for serving.

Add the cooked gnocchi to the brown butter and sauté briefly until they develop lightly golden edges.

6. Creamy Cheddar Sauce

Gently heat the cream in a small saucepan.

Do not allow it to boil vigorously.

Reduce the heat and gradually stir in the finely grated mature cheddar.

Add a little reserved gnocchi cooking water and stir until the sauce becomes smooth, glossy and creamy.

Finish with freshly ground black pepper.

Taste before adding salt – mature cheddar may already provide all the seasoning you need.

Serving

Spread a thin layer of cheddar sauce across the bottom of a warm shallow plate.

Arrange the brown butter pumpkin gnocchi loosely over the sauce.

Finish with:

  • A drizzle of brown butter from the pan
  • Crispy sage leaves
  • Finely grated Parmesan
  • Freshly ground black pepper

Serve immediately.

TGCC tip: Don’t completely cover the pumpkin gnocchi with cheddar sauce. Keeping most of the sauce underneath preserves the contrast between the silky cheese sauce and the lightly caramelised surface of the gnocchi.

Wine Pairing

Pumpkin gnocchi with cheddar, brown butter and sage calls for a white wine with refreshing acidity but enough body to complement the richness of the dish.

We recommend:

  • Chardonnay
  • Grüner Veltliner
  • Pinot Gris
  • Chenin Blanc
  • Dry Riesling

With a more mature cheddar, a Chardonnay with a subtle touch of oak can work beautifully.

The wine should refresh the palate and balance the creamy sauce without overwhelming the natural sweetness of the roasted pumpkin.

Final Notes and Variations

For Even Lighter Gnocchi

Allow the roasted pumpkin purée to release as much excess moisture as possible. You can also gently cook the purée in a dry pan for a few minutes.

Less moisture means less flour – and more delicate gnocchi.

For a Stronger Cheese Character

Use extra mature cheddar, but resist the temptation to simply add more cheese.

The aim is to keep the pumpkin, brown butter and sage clearly present alongside the cheddar.

For Crispier Gnocchi

Let the cooked gnocchi dry for a few minutes before transferring them to the brown butter.

This helps them develop beautifully golden edges in the pan.

For Kids

Choose a milder cheddar and add a little extra cream.

The sauce will be softer and creamier while still allowing the sweet roasted pumpkin to shine.
