• 1–2 tbsp mayonnaise
• 1 tsp Dijon mustard
• a few drops of lemon juice (optional)
• salt
• freshly ground black pepper

METHOD

Base

Boil the eggs until hard (about 9–10 minutes).
Cool in cold water, peel, and cut in halves.

Carefully remove the yolks into a bowl.

Cream Sauce

In a small bowl, combine:

• heavy cream
• mayonnaise
• Dijon mustard

Whisk gently until smooth and creamy.

Season with salt, pepper, and a few drops of lemon juice.

The texture should be silky, not too thick.

Filling

Mash the yolks with a fork.

Add:
• drained, flaked tuna
• finely chopped shallot
• chopped parsley

Fold in the cream sauce.

Mix gently.

The texture should stay creamy but not completely smooth.

Filling the Eggs

Spoon or pipe the mixture into the egg whites.
