Yogurt-Marinated Baked Chicken Thighs with Cheddar Mashed Potatoes
Baked chicken thighs are one of those reliable family classics that rarely disappoint. This version keeps everything we love about traditional roast chicken but adds two simple upgrades – a gentle yogurt marinade and creamy mashed potatoes with mature cheddar.
The yogurt helps keep the chicken tender and juicy without overpowering its natural flavour. Cheddar turns ordinary mashed potatoes into a side dish that usually wins over the kids as well.

The way you use the marinade is important.
The chicken thighs are marinated in yogurt, but not baked under a thick layer of it. Most of the excess marinade is gently removed before roasting. This allows the yogurt to do its work during marinating while helping the chicken develop a beautiful golden surface in the oven.
The result is juicy baked chicken thighs, silky cheddar mashed potatoes and a light natural jus – no flour or cream required.
Ingredients (Serves 4)
Chicken Thighs and Yogurt Marinade
- 4 large chicken thighs
- 150 g full-fat natural or Greek yogurt
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1 small garlic clove, crushed
- ½ tsp sweet paprika
- 1 tsp salt
- ½ tsp freshly ground black pepper
- ½ tsp Dijon mustard
Cheddar Mashed Potatoes
- 700 g floury potatoes
- 70–80 g mature cheddar, finely grated
- 50 g butter
- 120–150 ml whole milk
- Salt to taste
- A pinch of nutmeg
Roasted Vegetables
- 3 carrots
- 2 parsley roots or 1 small parsnip
- 1 small courgette (zucchini)
- 1 small red bell pepper
- 1–2 tbsp olive oil
- Salt
- Freshly ground black pepper
- 1 tsp sesame or black sesame seeds
Light Chicken Jus
- Pan juices from the roasted chicken
- 100–150 ml good-quality chicken stock
- 15 g cold butter
Method
1. Marinate the Chicken
In a bowl, combine:
- yogurt
- olive oil
- lemon juice
- crushed garlic
- sweet paprika
- Dijon mustard
- salt
- black pepper
Coat the chicken thighs thoroughly in the marinade.
Cover and refrigerate for 4–8 hours.
If convenient, prepare the chicken in the morning and roast it for dinner.
Remove from the refrigerator approximately 20–30 minutes before cooking.
2. Prepare the Chicken for Roasting
This step makes a real difference.
Gently remove most of the excess yogurt marinade from the chicken thighs. Do not rinse the chicken – a very thin coating of marinade should remain on the surface.
This prevents the yogurt from forming a heavy coating during roasting and allows the chicken to develop a beautiful golden colour.
Place the thighs in a roasting dish and drizzle lightly with olive oil.
3. Roast the Chicken Thighs
Preheat the oven to 200°C / 390°F.
Roast the chicken thighs for approximately 40–50 minutes, depending on their size.
Baste them once or twice with their own pan juices during roasting.
For a deeper golden finish, increase the oven temperature to 220°C / 425°F for the final 5–10 minutes.
The chicken should be completely cooked through while remaining tender and juicy.
Once cooked, remove from the oven and allow it to rest for 5–10 minutes.
4. Roast the Vegetables
Cut the carrots, parsley roots or parsnip, courgette and bell pepper into similarly sized pieces.
Toss with:
- olive oil
- salt
- freshly ground black pepper
Spread the vegetables on a baking tray and roast at 200°C / 390°F for approximately 25–30 minutes, until tender and lightly caramelised around the edges.
Add the courgette about 10 minutes later than the root vegetables to prevent it from becoming too soft.
Finish with a little sesame or black sesame.
5. Make the Cheddar Mashed Potatoes
Peel the potatoes, cut them into even pieces and cook in salted water until completely tender.
Drain thoroughly and allow them to steam dry for about a minute.
Pass the potatoes through a potato ricer or mash until smooth.
Add:
- butter
- warm milk, gradually
- finely grated mature cheddar
- a pinch of nutmeg
Gently combine until smooth and creamy.
Add the cheddar to the hot finished potatoes rather than cooking it separately.
6. Make the Light Chicken Jus
Once the chicken has been removed from the roasting dish, spoon off any excessive fat while keeping the flavourful juices and browned bits.
Add approximately 100–150 ml chicken stock.
Bring to a gentle simmer, scraping the bottom of the roasting dish to release all those caramelised flavours.
Reduce for a few minutes.
Remove from the heat and whisk in a small piece of cold butter.
Do not add flour or cornstarch.
The aim is not to create a thick gravy but a light, glossy chicken jus to spoon sparingly over the meat.
Serving
Place a generous spoonful of cheddar mashed potatoes on each plate.
Add the roasted vegetables and a chicken thigh.
Spoon a little warm chicken jus over the chicken.
Optionally finish the vegetables with:
- black sesame
- fresh herbs
- a few drops of lemon juice
Use the jus sparingly. It should connect the chicken with the mashed potatoes rather than turn the plate into a pool of gravy.
Tips for the Best Result
- Marinate the chicken in yogurt for at least 4 hours.
- Remove most of the excess marinade before roasting to help the chicken brown properly.
- The yogurt should tenderise the chicken, not form a thick crust.
- Use mature cheddar – a smaller amount will provide more flavour.
- Do not overdo the cheese. These should still taste like mashed potatoes rather than cheese sauce.
- Let the cooked potatoes steam dry briefly before mashing for a lighter texture.
- Never use a stick blender for mashed potatoes, as it can make them gluey.
- Do not thicken the chicken jus. A short reduction and a little cold butter are all it needs.

Yogurt belongs in the marinade. Cheddar belongs in the mash. And flour belongs nowhere.
The yogurt keeps the chicken tender, cheddar gives a familiar side dish a little extra character, and the natural chicken jus brings everything together without the need for a heavy sauce.

Wine Pairing
The combination of tender chicken, buttery potatoes and mature cheddar calls for a wine with refreshing acidity but enough body to complement the richness of the dish.

Probably the best match. A moderately full-bodied Chardonnay works beautifully with butter, cheddar and roast chicken.
Grüner Veltliner
A fresher alternative that cuts through the richness of the cheddar mash and pairs particularly well with roasted vegetables.
Riesling
A dry Riesling brings acidity and freshness, keeping the entire dish lively and balanced.
