Pheasant Legs Braised with Thyme, White Wine and Grapes

Ingredients (Serves 4)

  • 8 pheasant legs
  • 2 tbsp duck fat (or clarified butter)
  • 2 large shallots
  • 4 garlic cloves
  • 250 ml dry white wine
  • 250 ml good-quality chicken stock
  • 200 g white grapes
  • 6 sprigs fresh thyme
  • 2 bay leaves
  • 8 allspice berries
  • 6 black peppercorns
  • sea salt
  • freshly ground black pepper

To finish:

  • 20 g cold butter

Method

Brown the Meat

Pat the pheasant legs dry and season generously with salt and pepper.

Brown them on all sides in duck fat until beautifully golden.

Remove and set aside.

Build the Sauce

Cook the finely chopped shallots in the remaining fat until soft.

Add the garlic and cook briefly.

Pour in the white wine and reduce by about half.

Braise

Add the chicken stock.

Stir in the thyme, bay leaves, allspice and peppercorns.

Return the pheasant legs.

Cover with a lid and cook in the oven at 160°C (320°F) for approximately 1 hour 45 minutes.

Add the Grapes

About 20 minutes before the end, add the whole white grapes.

Allow them to soften gently while keeping their shape.

Finish

Remove the meat.

Reduce the sauce slightly if necessary.

Whisk in the cold butter.

Season to taste.

Return the pheasant to the sauce before serving.
