Peppermint Fridge Tart – Gretka’s South African Family Recipe

If you’re looking for an easy no-bake dessert that combines rich caramel, fresh bananas and a refreshing hint of mint, this Peppermint Fridge Tart is a recipe you’ll fall in love with. I first tasted this traditional South African dessert at a summer garden party, where it was prepared by my friend Gretka, who comes from South Africa. After the very first bite, I knew this creamy, no-bake treat deserved a place on TGCC. It’s light, refreshing and unlike almost any dessert you’ll commonly find in Slovakia.

That’s exactly how this one found its way to me.

Although beautifully simple, this dessert offers a unique combination of flavours that most people here have never experienced. Sweet caramel, ripe bananas and cool peppermint come together to create a surprisingly balanced dessert that’s perfect for summer gatherings, BBQs and family celebrations.

THE STORY BEHIND THIS RECIPE

Peppermint Fridge Tart is one of South Africa’s best-loved no-bake desserts. It is traditionally prepared without baking, chilled for several hours and served at family celebrations, garden parties and Sunday lunches.

Its signature ingredient is the iconic Peppermint Crisp chocolate bar, famous for its refreshing peppermint flavour and delicate caramel sweetness.

Unfortunately, Peppermint Crisp is very difficult to find in Slovakia.

That’s why I’ve kept Gretka’s original recipe while also suggesting a few locally available alternatives that come surprisingly close to the authentic flavour.

Perhaps that’s exactly why this dessert fascinated me even more.

Mint desserts are still relatively uncommon in Central Europe. While you’ll find Tiramisu almost everywhere, the combination of peppermint, caramel and bananas remains a delightful surprise.

If you enjoy refreshing desserts that are perfect for hot summer days, this recipe is definitely worth trying.

INGREDIENTS (Serves 8)

Cream

  • 1 can sweetened condensed milk cooked into caramel (or good-quality Dulce de Leche)
  • 250 ml heavy whipping cream (minimum 33% fat)
  • 1 tsp vanilla extract
  • a pinch of salt

Other Ingredients

  • 1 pack butter biscuits (Petit Beurre or similar)
  • 2 large bananas

The South African Touch

The original recipe uses Peppermint Crisp chocolate.

If you can’t find it, I recommend using:

  • grated Royal Mint biscuits,
  • finely grated quality mint chocolate (such as Mata or any similar brand),
  • or a handful of crushed caramel candies for extra crunch and a texture closer to the original dessert.

METHOD

Prepare the Cream

  • Whip the chilled cream until stiff peaks form.
  • Mix the caramel with the vanilla extract and a pinch of salt.
  • Gently fold the whipped cream into the caramel mixture until smooth and fluffy.

Assemble the Tart

  • Arrange a layer of biscuits on the bottom of a square or rectangular dish.
  • Add half of the sliced bananas.
  • Spread half of the caramel cream over the bananas.
  • Sprinkle with the prepared mint topping.
  • Repeat the layers once more.
  • Finish by generously grating mint chocolate or crushing Royal Mint biscuits over the top.

Chill

Cover and refrigerate for at least 4 hours.

For the best result, leave it overnight.

During chilling, the biscuits soften beautifully, the cream firms up and all the flavours blend together perfectly.

THE FINAL TOUCH

Just before serving, garnish with:

  • fresh mint leaves,
  • chocolate shavings,
  • or thin banana slices.

If you’d like to elevate the dessert even further, serve it with fresh or lightly grilled apricots.

Their gentle acidity beautifully balances the sweetness of the caramel.
