• pinch of chili
• 2 tbsp tomato paste
• 1 can chopped tomatoes
• 2 cans chickpeas
• 250 ml coconut milk
• 2 handfuls spinach
• salt, black pepper
• juice of 1/2 lemon
• lemon zest
• 3–4 tbsp Greek yogurt or crème fraîche
Golden Zucchini
• 1 medium zucchini
• 1 tbsp olive oil
• salt, black pepper
Jasmine Rice
• 250 g jasmine rice
• 320 ml water
• pinch of salt
Method
Rice
• rinse the rice
• add water and salt
• cook covered for 10–12 minutes
• let it rest
Curry
• cook onion in olive oil until soft
• add garlic and ginger
• add spices and toast briefly
• stir in tomato paste
• add tomatoes, chickpeas, coconut milk
• simmer for 12–15 minutes
• add spinach
• finish with lemon juice and zest
• gently stir in yogurt
Zucchini (final upgrade)
• cut into small cubes or slices
• heat oil in a pan
• sear on high heat until golden
• season with salt and pepper
• add on top when serving
