• 3–4 large sweet potatoes (washed, skin on)

• 1 small onion (finely chopped)
Topping
• 120–150 g cheddar (grated)
• 1 tbsp olive oil
• pinch of pepper
• herbs (thyme, rosemary or parsley)
Dip
• 200 g sour cream
• 1–2 tbsp mayonnaise
• 2 garlic cloves (crushed)
• pinch of salt
• fresh herbs
Method
Preparing the sweet potatoes
• wash and cut the sweet potatoes lengthwise
• place cut side up on a baking tray
• drizzle with olive oil and lightly season
• top with grated celery
Pre-baking
• cover the tray with foil
• bake at 200 °C for 20–25 minutes
• the potatoes should be tender but hold shape
Vegetable mixture
• combine carrots, peas and onion
• add oil, seasoning and herbs
• mix well
Final baking
• remove foil
• top each half with vegetable mixture
• sprinkle with cheddar
• bake uncovered for 10–15 minutes

Dip
• mix sour cream, mayonnaise and garlic
