Chicken Livers with Apples, Marjoram and White Wine
Tender chicken livers in a naturally thickened apple and onion sauce with marjoram, caraway and a splash of dry white wine
Chicken livers with apples are a great example of how one simple ingredient can transform a familiar home-cooked dish. Chicken liver has a rich, earthy flavour, while apples bring natural sweetness and gentle acidity that balance its intensity.
The key to this recipe is using apples in two different ways. Some are finely diced and allowed to almost melt into the sauce, while the rest are cut into larger pieces and sautéed in butter so they retain their shape and provide a sweet, juicy contrast.
Marjoram, caraway and sweet paprika give the dish its familiar Central European character, while a small splash of dry white wine brings freshness and depth to the sauce.
The result is still simple, comforting home cooking – just with a little extra character.
Why this chicken liver recipe works
• apples balance the rich flavour of chicken liver
• finely diced apple partially breaks down and naturally thickens the sauce
• larger sautéed apple pieces remain juicy and retain their texture
• marjoram, caraway and paprika add classic Central European flavours
• dry white wine deglazes the pan and adds freshness to the sauce

Chicken livers
• 700 g / 1½ lb chicken livers
• 2 large firm, slightly tart apples

• ½ tsp caraway seeds, lightly crushed
• 1 tsp dried marjoram
• freshly ground black pepper
• salt
For the sauce
• 50–70 ml / ¼ cup dry white wine
• 100–150 ml / ½ cup chicken stock or water
• ½ tsp Dijon mustard, optional
To serve
• steamed rice or mashed potatoes
• fresh parsley or thyme
• green peas, optional
How to make Chicken Livers with Apples
1. Prepare the chicken livers
Trim the chicken livers, removing any connective tissue, and cut larger pieces in half. Pat them thoroughly dry with paper towels.
A dry surface helps the livers brown properly instead of immediately steaming in the pan.
2. Prepare the apples
Cut half of the apples into small dice. These will soften and partially melt into the sauce.
Cut the remaining apples into thick slices or wedges so they retain their shape during cooking.
3. Sauté the apples
Heat the butter with a little oil in a large frying pan.
Add the larger apple pieces and sauté briefly on both sides until lightly golden.
They should not become completely soft – the aim is to give them some colour while keeping their shape and texture.
Remove from the pan and set aside.
4. Make the apple and onion base
Add the finely chopped onion to the same pan and cook until soft and lightly golden.
Add the garlic and finely diced apple. Cook for a few minutes until the apple begins to soften and break down.
5. Brown the chicken livers
Increase the heat and add the chicken livers.
Brown them briefly on both sides, then add the freshly ground black pepper and crushed caraway.
Reduce the heat before adding the sweet paprika and marjoram. Stir briefly.
Avoid frying paprika for too long over high heat, as it can become bitter.
6. Make the sauce
Pour in the dry white wine and scrape the bottom of the pan to release all the flavourful browned bits.
Allow the wine to reduce for 1–2 minutes, then add the chicken stock or water.
For a little extra depth, stir in ½ teaspoon of Dijon mustard.
Cook gently for approximately 5–8 minutes, depending on the size of the livers. The finely diced apple will continue to soften and combine with the onion and cooking juices, creating a naturally thickened sauce.
7. Finish the dish
Return the sautéed apple pieces to the pan and warm them through briefly.
Season with salt, freshly ground black pepper and, if needed, a little extra marjoram.
Avoid overcooking the chicken livers – short cooking is one of the keys to keeping them tender and juicy.
TGCC Tip: One apple, two jobs
The most important detail in this recipe is preparing the apples in two different ways.
The finely diced apple is allowed to almost melt into the onion and cooking juices, helping to create a naturally thicker sauce without flour or cream.
The larger pieces are sautéed separately and returned to the pan only at the end. This allows them to retain their shape, texture and more pronounced apple flavour.
The result is a combination of rich chicken liver, savoury sauce and sweet-tart sautéed apple in a single bite.
What to serve with Chicken Livers and Apples
For our version, we chose simple steamed rice, which absorbs the apple and onion sauce while allowing the chicken livers to remain the main flavour of the dish.
Creamy mashed potatoes are another excellent choice, particularly if you prepare a little extra sauce. Boiled or roasted potatoes also work well.
A few green peas add colour to the plate, while their gentle sweetness complements the apples.
What apples should you use?
Choose firm, slightly tart apples that will not immediately fall apart when sautéed.
Varieties such as Jonagold, Braeburn, Pink Lady or Granny Smith work particularly well. A little acidity is an advantage here, as it balances the richness of the chicken livers.
Wine pairing
Choose a dry white wine with good acidity and little or no noticeable oak.
Grüner Veltliner is a natural match. Its freshness and subtle peppery character work beautifully with the apples, marjoram and caraway.
A dry Riesling is another excellent option. Its acidity balances the richness of the chicken livers while complementing the fruitiness of the apples.
And there is a simple rule that works particularly well with this recipe: the wine you use in the pan can also go into your glass.
